Digital meat thermometer

Is using a thermometer the best practice? I've read that any type of hole in your meat will drain the juices out. I'm not much of a griller.
I'm not sure?

I have had trouble grilling fish lately and thought getting one of these would help.
 
Is it worth the $90? I see similar ones for about $30.
On way hand is any thermometer worth 90 bucks? On the othe handr... Its simply the best. If you cook or use a smoker you will use it a ton, it doesn't break, its super accurate, and truly instant versus the cheap models which aren't. On Christmas I cooked a full 7 bone prime rib and with my thermapen got it perfect edge to edge med rare (also used the reverse sear method which I would recommend for prime rib or any thick chop/steak). It was worth it not to mess up that piece of meat given what my butcher charged me. They usually do a sale a few times a year and you can score them for 70 bucks.. but it may be end of year.

I have a couple digital probe thermometers. One was kinda expensive from Williams Sonoma and the other was a cheap one I bought at Bed, Bath & Beyond. I don't notice a difference between the two. I don't use if for steaks, chops or burgers but it does come in handy when doing a roast or larger piece of meat on the grill or in the oven.

You can usually get by with just poking a steak to feel if it's done. It should feel like the muscle in your palm at the base of your thumb when you make the OK sign with your index finger for medium/mid-rare. After awhile, you just know what it looks like when it's done.

You don't want to make it a pin cushion but a single hole or two to check temp is totally fine. Everyone thinks they get the temp by feel right but most of the time they don't.
 
the cheap digitals dont hold up very long. spend the money or you'll be buying a new one every year. not sure why but i've gone through 4 or so in the last 2 years.
